2 : 1/ qt Light chicken stock

1 : pk (8-oz) cream cheese;

1 : c Boiling water

2 : pk (small) cream cheese

1/2 : cn Pimentos; chopped

1/2 : c Green pepper; chopped fine

1 : c Celery; chopped fine

1 : c Cornmeal

2 : c Unbleached white flour

4: 60 to 70 minutes Preheat the oven to 325~F

5: In the food processor or in a large bowl, stir together the flour, corn meal, salt, and sugar

6: Add the egg and mix well

7: Blend in enough of the milk to form a dough that will hold together in a cohesive ball

8: On a floured surface or pastry cloth, roll into a rectangle about 3/8 inch thick

9: With a sharp knife, cut the dough into 1-1/2- by 3-inch rectangles

10: Place them on a lightly greased or parchment-lined baking sheet

11: Prick each cracker 2 or 3 times with the tines of a fork

12: Bake for 60 to 70 minutes, or until the crackers are thoroughly dry

13: Cool on a rack

14: These crackers should be hard

15: If necessary, put them back in the oven for a few extra minutes
