4 : 1-1/2-pound cornish hen;
-rinsed : -rinsed and patted, dry
1 : /2 lb Shallots; trimmed and peeled
1 : /2 tb Vegetable oil
1/2 : c Chicken broth
1/2 : c Red wine
1/2 : c Water
2 : ts Cornstarch dissolved in
0: In medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt; set aside
1: In large mixer bowl, cream butter and sugars
2: Add eggs; beat until light and fluffy
3: Blend in pumpkin, milk, and orange zest
4: Add dry ingredients; mix well
5: Stir in chopped fruits
6: Spoon mixture into greased 2 1/2-inch muffin cups, filling 3/4 full
7: Bake in preheated 350F oven for 25 to 30 minutes, or until toothpick inserted in center comes out clean
8: Immediately remove from pans; cool on wire racks
9: Drizzle frosting
