0: BAKE at 375 degrees for 25 to 30 minutes
1: MAKES 2 coffee cakes
2: Blend together butter and 1/4 cup flour
3: Cover and chill
4: Soften yeast in warm water, adding 1 tablespoon sugar
5: Let stand 5 minutes
6: Beat 1 egg, reserving 1 tablespoon for the topping
7: Add cold milk, 2 tablespoons sugar, 1 teaspoon salt, and the yeast mixture
8: Blend in 2 3/4 cups to 3 cups sifted flour to form a stiff dough
9: Roll out on floured surface to a 12-inch square
10: Roll flour-butter mixture on floured surface (or between sheets of waxed paper ) to 10 x 4 -inch rectangle;; place in center of dough
11: Fold over ends of dough to overlap
12: Turn one-quarter way around; roll out again to a 12-inch square
13: Repeat the folding and rolling process two more times
14: Wrap in waxed paper
15: Chill for 30 to 60 minutes
16: Cover 1 cup golden raisins with boiling water
17: Let stand 5 minutes; drain well and reserve
18: Prepare Filling
19: Roll out dough to a 24 x 12-inch rectangle
20: Cut lengthwise into two 24x6-inch strips
21: Spread each with Filling
22: Sprinkle with raisins
23: Roll each strip as for jelly roll, starting with 24-inch edge
24: Moisten edges and seal well
25: Stretch each roll to 30 inches; seal any breaks
26: Place on greased baking sheets and form into pretzel shapes
27: Flatten to 1/2-inch thickness with rolling pin
28: Brush with reserved egg and sprinkle with mixture of 1/4 cup sugar and 1/4 cup blanched almonds
29: Cover
30: Let stand at room temperature for 30 minutes
31: Bake in moderate oven (375 degrees) 25 to 30 minutes
32: *Pillsbury's Best Self-Rising Flour is not recommended for use in this recipe
33: Filling: Cream butter
34: If desired add 1 to 2 teaspoons ground cardamom
35: Add confectioners' sugar, creaming well
36: Blend in 1 to 2 teaspoons cream until of spreading consistency
