Florentine Pork in French Bread Boats recipe

Ingredients

1 : c Vanilla wafer crumbs

3/4 : c Soft butter

2 : c Confectioners sugar

2 : Egg yolks

2 : Egg whites

1 : cn (9-oz) crushed pineapple;

-drained : -drained

1/2 : c Pecans or walnuts; chopped

Cherries : Cherries

1 : sm Onion; grated

1 : ts Cooking oil

1/2 : lb Ground beef, lean

1 : ts Salt

1 : ts Cumin

1 : Garlic clove; minced

1/4 : ts Hot sauce; to 1/2 ts.

18 : Tortillas; fresh

2 : c Cheese; shredded

Directions

0: Cut pork into slices, 1/4" thick

1: Place pork in plastic bag

2: Add dressing, turning to coat

3: Tie bag securely and marinate at least 15 minutes but no longer than 1 1/2 hour

4: Remove pork from marinade

5: Brown pork in oil in nonstitck skillet

6: Pour off drippings

7: Add tomatoes and spinach to pan

8: Cover tightly and cook over Medium-High heat for 2-3 minutes or until spinach is wilted

9: Pour off liquid

10: Meanwhile, remove soft center from bread to form boats

11: Spoon 1 cup of pork mixture into each boat

12: Sprinkle each with equal amount of cheese
