Honey-Glazed Game Hens (Classic) recipe

Ingredients

4 : c Rhubarb

1 : /4 c Sugar

6 : tb Flour

1/4 : ts Salt

2 : ts Lemon peel, grated

1/3 : c Honey strained

4 : dr Red food colour (up to 5)

2 : tb Butter

Pastry : Pastry for 2 crust pie

2 : lb Lean spare ribs

1 : cn Condensed beef bouillon

1/2 : c Water

2 : tb Maple syrup

2 : tb Honey

3 : tb Worcestershire sauce

2 : tb Barbecue sauce

1/2 : ts Dry mustard

3 : c Rice, cooked

1/2 : c Raisins

2 : 1/ c Milk

1/2 : c Honey

2 : tb Butter

1 : ts Grated Lemon peel

1 : tb Lemon Juice

3 : c Cooked rice

2 : 1/ c Milk

2 : tb Butter

1/2 : c Raisins (if you wish)

1/2 : c Honey

1 : ts Lemon juice (if you want)

2 : 1/4 lb Small carrots, peeled

4 : tb Olive oil

1 : oz Butter

3 : tb Clear honey

Salt : Salt & pepper

Parsley : Parsley to garnish

7: Place rack in center of oven and preheat to 425 degrees

8: Line a shallow roasting pan with aluminum foil

10: With kitchen shears, cut down both sides of the backbone of each hen to remove it

11: Cut through the center of the breast bone to cut the hens in half

13: Mix the salt, thyme and red pepper flakes together

14: Sprinkle over the tops and bottoms of the hens

15: Arrange the halves in the pan, skin side up

16: Bake for 20 minutes

18: Stir the orange juice and honey together

19: After the hens have baked for 20 minutes, pour this mixture onto the foil in the bottom of the roasting pan

20: Bake for 5 minutes to melt the honey

21: then begin brushing the hens with the juice and pan drippings every 5 minutes until the juices run clear from the thigh, about 20 minutes longer, for a total baking time of about 40 minutes

22: NOTES : A whole hen is large

23: But a half hen doesn't seem quite enough
