4 : c Oat or wheat bran

1 : 3/4 c Buttermilk

1 : ts Caraway seeds (optional)

3 : tb Red wine vinegar

1 : Clove garlic; minced

1/2 : ts Dijon-style mustard

3/4 : c Olive oil

1/2 : ts Oregano

1/4 : ts Marjoram

1/4 : ts Thyme

Salt : Salt and pepper; to taste

2 : Garlic cloves, coarsely

Directions

0: Trim fat from pork

1: Cut pork crosswise into 8 slices

2: Place between 2 sheets of heavy-duty plastic wrap, and flatten each slice to 1/4" thickness, using a meat mallet or rolling pin

3: Combine paprika and next 9 ingredients; stir well

4: Rub pork with paprika mixture

5: Place on a rack coated with cooking spray; place rack on a shallow roasting pan

6: Broil 5 inches from heat for 5 minutes

7: Turn pork over, and broil and additional 4 minutes or until done

8: Yield 4 servings

9: Per 3 ounce serving: 162 calories, 5
