Ingredients

3/4 : c All Purpose Flour

1/2 : c Whole Wheat Flour

1/2 : c Rye Flour

1/4 : c Stone Ground Cornmeal

1 : c Maple Syrup; Warmed

2 : c All-purpose flour

Directions

0: Combine boiling water and morels in a small bowl

1: Let stand until morels soften, about 35 minutes

2: Strain;reserve soaking liquid

3: Coarsely chop morels

4: : Preheat oven to 400F

5: Sprinkle chicken with salt and pepper

6: Heat oil in a large non-stick skillet over medium high heat

7: Add chicken to skillet; cook until golden about 4 minutes a side

8: Transfer chicken to a shallow baking dish (do not clean skillet

9: bake until chicken is cooked through, about 15 minutes

10: : Meanwhile heat the same skillet over medium high heat

11: Add onion, garlic and thyme and saute until golden about 5 minutes

12: Add morel soaking liquid, leaving any residue in the bowl

13: Boil the mixture until most of the liquid evaporates, about 4 minutes

14: Add chicken broth and 1/4 cup of Madiera; boil until gravy is reduced to 1 1/2 cups, aboout 5 minutes

15: Strain gravyinto small saucepan; add morels

16: Cover and simmer 5 minutes

17: Whisk 1 tablespoon of cornstarch and 1 tbs madiera in a small bowl

18: Whisk into gravy; simmer until thickened, about 30 seconds

19: Season gravy with salt and pepper

20: Spoon over chicken and serve
