Ingredients

3/4 : c Soft butter

1 : c Vanilla wafer crumbs

2 : c Confectioners sugar

2 : Egg yolks

2 : Egg whites

1 : cn (9-oz) crushed pineapple;

-drained : -drained

1/2 : c Pecans or walnuts; chopped

Cherries : Cherries

1 : sm Onion; grated

1 : ts Cooking oil

1/2 : lb Ground beef, lean

1 : ts Salt

1 : ts Cumin

1 : Garlic clove; minced

1/4 : ts Hot sauce; to 1/2 ts.

18 : Tortillas; fresh

2 : c Cheese; shredded

Directions

0: Combine dry ingredients in a mixing bowl

1: Cut in shortening

2: Make a well in the center and add water, a small amount at a time, to form a dough

3: Knead dough in bowl until smooth and elastic

4: Cover and wet aside for ten minutes

5: Form dough into egg-sized balls and flatter between palms

6: With rolling pin, roll each ball into a 6 inch circle, about 1/8 inch thick

7: Cook on preheated ungreased skillet over medium high heat, apprx

9: per side, until tortilla looks slightly speckled

10: Cover with a clean towel to keep warm and soft until served
