Healthful Banana Bread recipe

Ingredients

3 : lb Boneless pork shoulder

1 : c Kikkoman Teriyaki Sauce

3 : tb Brown sugar; packed

3 : tb Dry sherry

1 : ts Minced fresh ginger root

1 : Garlic clove; minced

1 : pk Dry chicken noodle soup

1 : cn Tuna (7 oz)

1 : tb Butter or margarine

1/2 : ts Soy sauce

1 : cn Chunk or crushed pineapple

2 : tb Cornstarch

2/3 : lb Thick slices fresh tuna fish

1 : c Domestic (inexpensive)

-Reisling : -Reisling wine

Few : Few tiny capers

Cooking : Cooking oil

Flour : Flour

2/3 : Clove garlic

1 : ts Fresh ground ginger

1 : lb Cooked turkey, " cubes

8 : oz Can pineapple chunks

1 : md Onion, cut into quarters

1 : Sweet green pepper in chunks

10 : Cherry tomatoes

1 : tb Soy sauce

1/2 : ts Curry powder

1/4 : ts Ground ginger

3 : c Cooked brown rice

2 : c Cooked turkey

-- : -- (coarsely chopped)

8 : oz Pineapple chunks in juice

-- : -- drain; reserve juice

8 : oz Sliced water chestnuts

-- : -- drained

1 : md Apple; unpeeled

-- : -- cored and chopped

1/3 : c Chopped macadamia nuts

1/2 : ts Salt

1/2 : c Plain yogurt

Lettuce : Lettuce leaves

1/4 : c Shredded coconut; toasted

Directions

0: Preheat oven to 350F

1: Lighly grease an 8x4 inch loaf pan or coat with vegetable spray

2: In a mixing bowl, combine the flour, coconut, baking powder, baking soda, and salt (optional)

3: In another mixing bowl, combine the banana, oil, and honey

4: Stir the banana mixture into the dry ingredients just until combined

5: (Do not overmix

6: ) The batter should be lumpy and stiff

7: Spread the batter evenly into the prepared loaf pan and bake until a tester (toothpick) inserted in the center comes out clean, about 45-50 minutes

8: Allow the banana bread to cool in the pan about 10 minutes, then turn it out of the pan and cool completely on a rack

9: Exchanges: 1 starch/bread 1 fat NOTES : For low fat version, substitute applesauce for oil
